Instructions
Vanilla Cupcakes:
- Preheat: Preheat oven to 350°F (175°C). Line cupcake pan with paper liners.
- Mix dry ingredients: Whisk together flour, sugar, baking powder, and salt.
- Cream butter: Beat butter until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding: Add flour mixture and milk alternately, beginning and ending with flour.
- Fill and bake: Fill liners ⅔ full. Bake 18-20 minutes until toothpick comes out clean.
- Cool completely: Let cool in pan 5 minutes, then transfer to wire rack.
Chocolate Cupcakes:
- Preheat: Preheat oven to 350°F (175°C). Line cupcake pan with paper liners.
- Mix dry ingredients: Whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
- Mix wet ingredients: In another bowl, beat eggs, buttermilk, coffee, oil, and vanilla.
- Combine: Pour wet ingredients into dry and mix until just combined.
- Fill and bake: Fill liners ⅔ full. Bake 18-20 minutes until toothpick comes out clean.
- Cool completely: Cool before frosting.
Buttercream Frosting:
- Beat butter: Beat butter until creamy and smooth.
